The Origin Story

The Meat Wagon is a new kind of butcher experience — on wheels. It’s a father-and-son venture built on decades of industry know-how, a passion for quality meat, and a drive to do things differently.


Joe Rosa has spent over 40 years in the meat business, working every angle from wholesale to retail and everything in between. His son Danny brings a fresh perspective, a background in restaurant management, and the same no-BS approach to good food and good service.


We’re still dialing in the details — where we’ll be, what we’ll offer, and how we’ll grow — but one thing is certain: we’re here to serve up premium cuts, real flavor, and a butcher shop experience that’s anything but ordinary.
